We use a gentle process: all ingredients are chopped to the desired size in a blender and then mixed in a large container. This mechanical process of mixing raises the temperature of the processed mass to about 70 degrees. The mass is transferred to smaller containers and slowly cooled to 16 degrees in the refrigerator. This gentle cooling process takes place over a period of 2 days. When the mass has reached 16 degrees, it is shaped into the desired form and packaged.
